For almost 18 years, Judy and John Arreola
lived in the southeastern part of Venezuela, in a community at the confluence
of the Orinoco and Caroni Rivers, called Puerto Ordaz, which was founded, built
and developed by several major U.S. corporations in the 1950's.
Among them were U.S. Steel, Bethlehem Steel,
Reynolds Metals Company, and others. Several American and English-speaking
families lived there, along with the local Venezuelans, to form a very active
social life. While the husbands worked, the wives played golf, tennis, bridge,
or cooked.
Many of the recipes we offer you are either
our own creation or our favorites from dinner parties we
attended.
Sesame Chicken
- 2 2 /2-3 pounds chicken broilers,
quartered
- Juice of 1 lemon
- 4 cloves or garlic
- 1 cup salad oil
- ½ cup soy sauce
- Fresh ginger
- ¾ cup sesame seeds
Sprinkle chicken with lemon juice. Grate
garlic and mix with oil, soy sauce, and ginger; pour this over chicken and soak
for 30 minutes. Broil chicken skin side down for 30 minutes. Then turn, basting
again. Coat each piece with sesame seeds and return to broiler until seed is
golden.
This can be done on the barbecue grill by
wrapping the chicken in aluminum foil, and when done (40-50 minutes) unwrap and
roll in sesame seeds and grill.
Judy's Cooking Tip
"Use the microwave to quickly cook ground
beef, ground turkey and bulk sausage. Put the meat in a plastic colander placed
inside a shallow dish. Microwave for one minute, drain the shallow dish and
stir the meat. Continue this routine until the meat is no longer pink.
It ends up drained and crumbled just like it
would be if were fried.
Chicken Casserole
- Mix: 2 cans cream of chicken
soup
- 1 tsp. lemon juice
- 1 cup mayonnaise
- ½ tsp. curry powder
Four chicken breasts - boil until done.
Remove skin and break up into pieces. Three pkgs. of broccoli stalks boiled and
drained.
In casserole place layers of chicken and
broccoli (place broccoli first). Cover with sauce. Sprinkle ½ cup
sautéed bread crumbs and then top with ½ cup shredded sharp
cheese.
Bake uncovered at 350 degrees for 1
hour.
Hamburger Stroganoff
- ½ cup minced onion
- 2 Tbsp. flour
- 1-clove garlic minced
- 1-tsp. salt
- ¼ cup butter
- ¼ tsp. pepper
- 1 lb. ground beef
- 1 lb. fresh mushrooms or 8oz.Can
sliced
- l0 ½ oz. can cream of chicken
soup, undiluted
- 1 Cup sour cream
- 2 Tbsp. minced parsley
Sauté onions and garlic in butter
over medium heat. Add meat and brown. Add flour, salt, pepper and mushrooms.
Cook 5 minutes. Add soup; simmer uncovered 10 minutes. Stir in sour cream. Heat
through. Sprinkle with parsley. Serve with noodles or rice.
